Halloumi Skewers
Yield: 4 skewers, about 2 servings
INGREDIENTS
2x 9 ounce packages Halloumi
Sea Salt, to taste
Extra Virgin Olive Oil, to taste
Tomato Jam, recipe below
1 teaspoon Cilantro, chopped
METHOD
Portion the halloumi into 1-inch cubes, about 1.5 ounces each . Thread 3 cubes each on metal skewers. Set aside.
Put a cast iron pan over medium-low heat. Put the skewers directly into the dry pan. Let cook, undisturbed, until golden brown, about 3 minutes. Flip and cook until golden on the other side, about 3 minutes more.
Remove from the pan and place on your serving tray. Sprinkle the halloumi with flaky sea salt. Drizzle with olive oil. Dot the tomato jam on the skewers and around the plate.
Finish with the chopped cilantro.
